Can you imagine living here on Earth without eggs? I mean, we use eggs almost every day! Yes, mostly for breakfast, but we also use them for a lot more! If we would just be talking about the different recipes of eggs all over the world, it could take us days because there are literally a million egg recipes out there. 

For Filipinos, we are familiar with a handful of recipes containing eggs. Firstly, there are our very own SiLog meals! As we all know, the “Log” in “SiLog” means itlog or egg. Just with this example alone, you can already think of many other recipes. There’s the Tapsilog, Longsilog, Baconsilog, Hotsilog, Chixilog, and many more! Although it’s just a simple sunny-side-up egg, it’s still a huge part of an entire breakfast cuisine. 

Moreover, we all know about scrambled eggs, omelets, boiled eggs, and even tortang talong. Personally, one of my most favorite Filipino egg dishes is the tortang talong, you simply toast the skin of an eggplant, scrape off the inside, incorporate it with eggs, and then fry it. Voila! I know you’re interested, so we’ll definitely talk about that recipe some other time!

Eggs aren’t only used for breakfast meals, it is also the main ingredient for lots of pastries! Cakes, bread, pancakes, and many others make use of eggs as their main ingredient. However, today, we’ll be talking about one of the popular dishes for breakfast or merienda here in the Philippines using eggs as its main ingredient, the almighty Egg Salad!

Egg Salads are known all over the world and each country has its own delicious version of them! Despite the popularity of Egg Salads, its true origin is quite unknown. Well, this is because, since the olden times, eggs were always ubiquitous and affordable. So, almost everyone had an idea what an egg is and what to do with it! 

Well, for some reason, Egg Salads aren’t always consumed as salads. For some countries, especially in the Philippines, it’s treated as a spread. That’s right, a sandwich spread or palaman in Tagalog. Just have an Egg Salad sandwich with a cup of freshly brewed coffee and you’re good to go!

Egg Salad Recipe

The Egg Salad can be the perfect breakfast or merienda meal for you! Why? Well, because it’s so easy to prepare. All of the ingredients you’ll be needing are already inside your fridge! Otherwise, you can always get the ingredients at your local market or grocery store. So, shall we begin? Let’s go!

Firstly, we’ll be needing eggs, mayonnaise, bell pepper, onion leaves, red onion, salt, pepper, and lettuce! The lettuce is only optional but it provides an additional layer of texture and flavor, so I’d say go for it! Of course, you can always be creative and add every bit of flavor you’d like! You can try adding bacon, ham, cheese, or cucumber. 

To start, simply boil the eggs! It depends on how you want your eggs, if you like it hard-boiled, then go for it! Once you’re done boiling the eggs, simply peel the shells off of each one. 

Next, cut the onion, bell pepper, and onion leaves, then set them aside. Now you’ll be needing to cut the peeled eggs using the egg cutter. If you don’t have one, then you can just cut them the normal way! Just make sure to cut them in equal portions as much as possible. After that, mix them all together and then add the bell pepper, salt, and pepper. 

Finally, throw in the red onion, onion leaves, and mayonnaise. Mix them well and voila! You already made your own version of Egg Salad at home! Just place it on top of the lettuce and serve it chilled! Now, you can eat it as it is or spread some to make a sandwich. 

And just like that, you now have a tasty and easy-to-make breakfast or merienda! If you have a creative idea to add, then go with it! It’s your salad, after all.

Ingredients
  • 8 pcs Boiled egg
  • ½ cup mayonnaise
  • 1 pc red bell pepper ( small dice)
  • 5 strings of onion leaves
  • 1 pc red onion ( small dice)
  • 1 tsp salt
  • ½ tsp pepper
  • Lettuce ( optional)
Instructions
  1. Boiled the eggs and peeled.
  2. Cut the onion, bell pepper and onion leaves, set aside.
  3. In a big bowl cut the egg using an egg cutter .
  4. Mix with bell pepper and season with salt and pepper.
  5. Add the red onion,onion leaves mayonnaise. Mix well
  6. Serve chilled. Enjoy
