- 4 cups salad greens
- 2 tbsp chopped mint
- 3 tbsp crumbled feta cheese
- 2 tbsp chopped olives
- ½ cup garbanzo beans
- 1 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- Sea salt and pepper to taste
- Combine first five ingredients.
- Toss with olive oil and vinegar, and add salt and pepper to taste.
