And just like what I’ve mentioned, the baking procedures are beginner-friendly and easy to follow.
Before we start, let us first have a quick recap of all the required ingredients, shall we? We’ll be needing heavy cream, butter, egg, canned corn, all-purpose flour, Polenta corn meal, white sugar, baking powder, vanilla, and salt. If heavy cream is not available, we can use evaporated milk as its alternative. Oh, and don’t throw out the corn water from the canned corn, okay? Now that we’ve got everything we need, let’s start! After preparing all of the ingredients beforehand, the first thing that we have to do is combine all of the dry ingredients. That includes flour, cornmeal, sugar, baking powder, and salt. So in a clean mixing bowl, simply pour all of these and begin mixing them thoroughly. Next, we can now add the egg, evaporated milk or heavy cream, corn water, and some melted butter. Continue mixing all of these until all the ingredients are well-incorporated and balanced with each other.
Finally, it’s time to add the corn! Mix the ingredients well until the corn is evenly distributed. Now that our mixture is ready, it’s time to prepare the baking pans! Simply brush some butter on the baking pans before placing a scoop of the muffin mixture. Don’t forget to put some corn topping on! Bake these yummy treats for about 25 to 30 minutes until they’re toasted and well-cooked. Serve them while hot and enjoy your very own version of Kenny Rogers Roasters’ iconic corn muffins!
