Ahh, Adobo. Probably the most iconic Filipino dish of all time and is highly recognized by different people from all over the world. I mean, you really just can’t deny the original taste and flavor brought by the Adobo, right? Whether it’s pork, chicken, or beef, the combination of the soy sauce, the vinegar, and all the spices will really make you feel at home wherever you are. Well, that’s exactly the reason why Adobo is considered the national dish of the Philippines, right?
Another interesting thing about Adobo is that the taste and flavor of the dish entirely depend on the person cooking it. No one can ever duplicate your version of the Adobo because you have your own style and skill to cook it. And for me, that’s an amazing thing! That’s also the very reason why there are countless different recipes for Adobo but despite that, all of them are equally special and delicious. There’s Adobo sa Gata, Adobo sa Puti, Adobong Tuyo, and all that but we’re going to talk about them some other time because today, Panlasang Pinoy will teach us how to cook their Original Filipino Chicken Adobo Without Vinegar Recipe!
That’s right! For this recipe, we won’t be using one of Adobo’s classic ingredients, vinegar. So, are you ready? I hope you’ve cooked enough rice! Let’s begin!

Alright, let’s do it! One of the best things about Adobo is that all of the ingredients required to cook it are readily available in local markets and nearby grocery stores. So I’m sure that you won’t have any problems gathering everything we need! Moreover, the cooking procedures are also beginner-friendly and actually allow you to become as creative as you can be. Amazing, huh?
Before we begin, let us first go through the list of ingredients we’ll need for our Chicken Adobo recipe. First, we’ll be needing chicken, garlic, onion, and ginger. And for the spices, we need salt, pepper, sugar, soy sauce, calamansi juice, water, and oil. As you can see, we won’t be using vinegar for our recipe today. Instead, we will use calamansi juice as a substitute. Tune in because this will absolutely be a delicious recipe!
Now that we’ve got everything that we need, it’s time to cook. Don’t worry, this won’t take long! The first thing that we have to do is to prepare the Adobo sauce. Simply combine the soy sauce, calamansi juice, salt, pepper, and sugar in a clean bowl. Be sure to mix all the ingredients thoroughly to fully combine all the flavors, okay? Next, we will now sautè the ginger and garlic on the pan until they both become aromatic. After that, add the chicken and keep on sautèing everything until the meat turns brown and pan-fried. Now, just add some water and let it simmer until the meat is tender and cooked.
Once the chicken meat is cooked, you can now add the Adobo sauce and keep on stirring until all the flavors are well incorporated into the chicken. Allow the mixture to simmer until the chicken meat is well-cooked. And voila! Just add the sliced onions and keep on mixing until your Chicken Adobo is finally cooked.
Boom! Easy, right? Just serve this mouthwatering Chicken Adobo with freshly cooked white rice and a glass of ice-cold soft drinks. I’m sure you’ll have an extra special dinner! Oh, and just like what I’ve said earlier, cooking Adobo gives us a chance to be as creative as we want to be. So for example, if you want your Adobo to have a little touch of spiciness, then you can go ahead and add some chilies to the recipe. It’s totally up to you!
