
The steps of Cooking Rellenong Pusit literally translates to Stuffed Squid. The word “relleno” means stuffed in Spanish. This recipe calls for large squid to be stuffed with cooked ground pork. The outer part is coated with flour. The squid is then pan-fried until done.
Ingredients.
- 250 grams ground pork
- 2 pcs big squid
- 1/4 cup green peas
- 1 small piece carrot (chopped)
- 1 pc onion
- 5 cloves garlic
- 2 pcs egg
- 1/2 cup flour
- 1 small pack oyster sauce
- 1 tsp salt
- 1 tsp pepper
- 1 tsp sugar
- Chopped spring onion
- Oil for saute
For adobo cream sauce
- 2 tbsp cream
- 1 tbsp vinegar
- 1 1/2 tbsp soy sauce
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp sugar
- Slurry (cornstarch + water)
Procedure.
- Prepare all the ingredients and clean the squid.
- Heat the pan with oil then saute the garlic and onion until translucent.
- Add the ground pork and stir it well.
- Add the chopped carrots and green peas then season oyster sauce.
- Mix well until fully cooked. Let it cool
- Mix with egg, spring onion, flour, salt, pepper, and sugar. Mix it well.
- Put the mixture inside of the squid then secure with a BBQ stick.
- Fry until the squid is well cooked.
- Served with Adobo Cream Sauce. Enjoy
Adobo Cream sauce.
- In the same pan where the squid was fried, pour the vinegar, soy sauce and cream.
- Season with salt, pepper and sugar.
- Thicken with slurry until it reaches the consistency of the sauce.
