Before we begin, let me just list down all the ingredients we’ll need for our recipe today. The ingredients we’ll need are vinegar, soy sauce, ground pepper, peppercorn, oyster sauce, sugar, bay leaf, seasoning, salt, onion, garlic, ginger, water, chicken feet, and of course our special ingredient, Sprite! You can also add a little bit of spice by putting in some chilies or siling labuyo if you want so it gets more and more appetizing. Alright! Now that we’re all set, let’s start cooking!
First, we have to saute the garlic, onion, ang ginger in a frying pan. Just put a little bit of oil and begin cooking the herbs until they’re well-cooked. Next, we can now add the chicken feet or adidas into the pan and continue sauteing. When the chicken feet are browned enough, you can now add the flavors and spices such as salt, ground pepper, seasoning, soy, sauce, and some water. Mix everything up and let it simmer for about ten (10) minutes. After that, put the oyster sauce and sugar into the pan before covering it and letting it boil. Finally, once the mixture is already boiling, you can now add the peppercorn and bay leaves. And that’s it for now! Let it cook for about an hour in medium heat so the chicken feet become well-cooked and tender to the bones.
After an hour has passed, we can now finally add the vinegar and our special ingredient, Sprite. Just a small bottle will do. You can actually buy it from the nearest sari-sari store and just ask for “Sprite Mismo”. Make sure to mix everything well so that all the flavors are perfectly distributed. If you want to add some spice to the dish, now would be a perfect time! Add some spicy siling labuyo before covering the pan then just let the sauce reduce to your preferred consistency. And voila! The only thing missing is a cup of freshly-cooked white rice and you’re all good.
