Lechon Pares Recipe

 Lechon pares, or pares as it is commonly known, is a meal that consist of Pork asado (pork stewed in a sweet-soy sauce), garlic fried rice and a bowl of pork broth soup. The soup may originate from the broth in which the meat is simmered in until tender before being seasoned with the sweet-soy sauce but it can also be prepared separately and be made with pork bouillon cubes instead. 

Ingredients:

  • Left over lechon
  • Onion
  • Garlic
  • Ginger
  • Star anise
  • ½ cup Soy sauce
  • 1 tbsp. Sugar
  • ½ tsp. Salt and pepper
  • Bay leaf
  • Water or Pork stock
  • 2 tbsp. Cornstarch
  • oil

Procedures:

  1. Saute onion, garlic and ginger.
  2. Add the star anise and bayleaf then lechon.
  3. Seasoned with Sugar, Soy sauce salt and pepper.
  4. Stir well then add water or pork stock. Let it boil.
  5. Thickened with cornstarch.
  6. Serve with Rice or Garlic Rice.
