Mouthwatering Recipes for That Leftover Ham!

It is not new to us that after food-filled seasons such as New Year or Christmas, it is not an accepted tradition for us to just throw away all that’s basically considered as leftovers. We love resourcing them into creating a new and still elegantly delectable dishes- and that’s definitely a fact especially for Filipinos.

Aligned with that, one of which that is commonly left on the table is ham- although we all know it is just as interesting as the others, we still could find ourselves, again and again, seeing this one on the fridge after the whatever-season’s eve.

Hence, in order for us to make full use with this one, we have made a list of recipes that could serve as your guide in creating a delicious deal out of your leftover ham.

A staple, soup, and a side snack all for you- and with the use of that piece of ham in the fridge!

Ham and Lima Bean (Patani) Fried Rice

Do you have a knack trying out new stuff? How about, adding up a Southern twist to your usual -boring- fried rice? If that’s the case, we’ve got you then!

Prepare the following ingredients:

  • 3 tbsp of canola oil
  • 1 tbsp of toasted sesame oil
  • 1/4 cup of soy sauce
  • frozen baby lima beans in 1 1/2 cups serving
  • 5 pieces of scallions
  • 2 eggs
  • 1 cup of cubed ham
  • 2/3 cup matchstick carrots
  • 2 pouches of microwavable white rice
  • 2 tsp of minced garlic
  • 1/8 tsp of salt

Cooking Instructions:

  1. First, the beans should be cooked in boiling water over medium heat until it is tender. Drain afterward.
  2. Both the white and green thinly sliced parts of scallions should be set aside.
  3. Heat 1 tbsp of oil to medium heat and pour the beaten 2 large eggs. Add the salt by sprinkling it all over, cook but do not stir and wait until a minute- as soon as the egg is lightly brown in the underneath, flip it for around half a minute.
  4. Afterward, transfer the cooked egg, fold in half and chop all of it.
  5. Heat the 2 tbsp oil left to medium and cook the sliced parts of scallion, ham, carrots, and garlic. Be sure to stir constantly. When the ham is light brown already, rice and sesame oil can be added and stir it all for 2 minutes.
  6. Lastly, stir in the chopped eggs, lima beans, and green scallion slices. Be sure to add soy sauce before stirring.

Ham and Vegetable Soup

Do you know that within less than an hour of preparation then you can already have your pleasure-seeking desires fulfilled- yes, with this soup, of course!

Well if you’re a skeptic then why not indulge yourself with the brought goodness of this soup through the help of the following steps?

Prepare the following ingredients:

  • 5 slices of bacon
  • 3 cups of diced cooked ham
  • 2 large leeks with 2 inches of green top, cut in half lengthwise and thinly sliced (about 5 cups)
  • 4 celery stalks, thinly sliced (about 1 1/2 cups)
  • 6 garlic cloves, minced
  • 2 tablespoons chopped fresh rosemary
  • 1/2 (16-ounce) package precut carrot chips or slices (about 2 1/2 cups)
  • 1 1/2 pounds parsnips, cubed (about 4 cups)
  • 10 cups of vegetable broth
  • 4 cups of coarsely chopped cabbage
  • 1/2 teaspoon of freshly ground pepper
  • Chopped fresh Italian parsley

Cooking Instructions:

  1. Cook the bacon over medium heat until it is crispy- set aside.
  2. Put the celery to a pan with about 2 tbsp of drippings; cook and stir occasionally until tender.
  3. Together with rosemary, add garlic; cook for 1 minute. Then add up carrot and all the vegetables to boil.
  4. Reduce heat and simmer until vegetables are finally tender.
  5. Crumbled bacon and parsley will be sprinkled for finishing as the soup is placed on individual bowls.

Ham Stuffed Baked Potatoes

Potato lover, huh? Well, we’ve got a recipe that would both allow you to enjoy your leftover ham and fulfill your potato cravings!

Prepare the following ingredients:

  • 4 baking potatoes
  • 2 ounces of diced ham
  • 2 tablespoons plain and fat-free yogurt
  • 2 tablespoons of water
  • A 5-ounce bag of baby spinach
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of freshly ground black pepper
  • 2 ounces of shredded cheddar cheese, shredded

Cooking Instructions:

  1. Microwave the pierced baking potato (using a fork) into high until tender (around 15 minutes). Remove and set aside for cooling.
  2. Prepare the spinach by pouring 2 tbsp of water over medium heat. Cool for 5 minutes and dry through squeezing it inside a paper towel. Chop it afterward.
  3. Cut a one-third part of the potato lengthwise so as to remove its pulp.
  4. In a bowl, mix the potato pulp, yogurt, salt, pepper, ham, cheese, and the coarsely chopped spinach altogether.
  5. Finally, fill the shells with the mixture made from the previous step.
