Its taste and characteristics are interpreted differently among regions. This can be found in Spain, Puerto Rico, Mexico, Chile, and other countries. In the Philippines, longganisa also differs from one place to another. It is flavored with indigenous species, and each province has its own variation. Two common longganisa types are those from Lucban, Quezon and from Vigan. The one from Lucban is notable for its garlic flavor. Another type is that from Guagua, which is almost sour in taste.

Skinless Longganisa Recipe

Ingredients
  

  • 1 kg ground pork
  • 1/2 cup brown sugar
  • 4 tablespoons soy sauce
  • 4 teaspoons fine salt
  • 1 tablespoon hot sauce
  • 8 tbsp brown sugar
  • 2 tsp salt
  • 2 tsp black pepper
  • 1 tablespoon garlic minced
  • 2 eggs beaten
  • 2 tbsp breadcrumbs cooking oil as needed plastic wrap

Instructions
 

  • Mix everything by hand in a large bowl.
  • Form into thin logs of 50 grams each and wrap with plastic wrap.
  • Refrigerate.
