Pancit dishes are a specialty of Filipinos, every celebration, especially birthday parties, must have these tasty noodles as a wish of long life for the celebrant. There are tons of Pancit dishes in the Philippines, almost every region has its own special recipe! For starters, it is common for us Filipinos to know about the usual recipes such as Pancit Bihon, Pancit Canton Guisado, Lomi, and Pancit Sotanghon. These are already our favorites ever since we were kids!
Aside from these “OG” Pancit recipes, there are also other specialties from other regions of the country. There’s the Pancit Bato of Camarines Sur, Pancit Estacion of Cavite, Pancit Cabagan from Isabela, the iconic and fan-favorite Pancit Malabon, and of course, the signature Pancit Chami from the Lucena City of Quezon Province.
Pancit Chami is a classic noodle dish of Quezon usually made of flat Miki noodles and stir-fried with savory meat like chicken, pork, or beef. It is then perfectly topped with vegetables and prawns. Chami has an iconic and distinct flavor because of its heavenly sweet and savory taste. This special pancit dish is perfect for any meal of the day whether it’s for breakfast, lunch, dinner, and especially merienda.

Sweet and Spicy Chami Recipe
Don’t worry! All of the ingredients that we’ll need for our special Sweet and Spicy Chami Recipe can be easily found in local markets and grocery stores. Moreover, the preparation procedures are like a walk along the park so I’m sure you’ll be able to catch up and add another blockbuster dish to your menu. Alright, shall we?
To begin, the ingredients we’ll need are pork liver, pork liempo, Miki noodles, carrot, cabbage, onion, garlic, red and green chilies, oyster sauce, soy sauce, water slurry, pepper, salt, sugar, oil, and to make our dish more special, squid balls. The squid balls are optional but since we always aim for the best, then might as well include them!
The first thing that we need to do is neatly cut all of the ingredients and set them aside accordingly. This allows us to free up the working space so that we’ll be able to cook with much comfort and confidence. Now, let’s start cooking! Pour some oil into the heated pan then proceed to sauté the garlic for about 1 minute until the color turns slightly brown. Then, add the onions and keep on sautéing. Once you’ve done that, it’s now time to add the pork liver and pork liempo. Season the mixture with soy sauce, salt, and pepper to properly cook the meat. Finally, it’s now time to add the carrots, cabbage, and fried squid balls to the mixture. Once everything is cooked and done, remove the mixture from the pan and set it aside for a while.
Now it’s time to cook the noodles! Using the same pan, add some water, soy sauce, and sugar to season all the remaining flavors of the mixture. Then, simply add the oyster sauce, chopped chilies, and Miki noodles. Make sure to stir frequently so the noodles will be cooked evenly. Once the noodles are finished cooking, it’s now time to add the mixture of pork, carrots, and cabbage back. Keep on stirring to incorporate all of the flavors with each other.
Finally, add the water slurry to the mixture and stir until the desired consistency of our yummy Sweet and Spicy Chami is reached. And that’s it! Serve the dish with calamansi and enjoy it with your family!

Ingredients.
- 150 grams pork liver
- 150 grams pork liempo (boiled and slice)
- 10 pcs Squid balls (fried) optional
- 400 grams miki noodles (egg noodles)
- 1 small carrot
- 1/2 small cabbage
- 1 pc red onion
- 3 cloves garlic
- 2 pcs red and green chillies
- 2 small pack oyster sauce
- 1/4 cup soy sauce
- 1 cup water
- 1/2 cup slurry (water + cornstarch)
- 1 tsp pepper
- 1 tbsp sugar
- 1 tsp salt
- Oil for frying and saute
Procedure.
- Prepare all the ingredients and cut.
- Heat the pan with oil then saute the garlic for 1 minute until it turns slightly brown.
- Add the onion and saute it well before adding the pork liver.
- Add the pork liver and pork meat. Stir.
- Season with soy sauce, pepper and salt. Mix well
- Add the carrot , fried squid balls and cabbage, stir it well then remove the mixture from the pan.
- Add the water then season with soy sauce and sugar.
- Add the chopped chillies, miki noodles and oyster sauce. Stir it frequently
- Add the cabbage, carrot, liver and pork mixture.
- Add the slurry to slightly thicken the sauce and stir for 1 minute.
- Serve with Calamansi . Enjoy
